Introduction

this can use pretty much any vegetable. I try to keep together veggies that cook at about the same rate. this can use pretty much any vegetable. I try to keep together veggies that cook at about the same rate.
Number of Servings: 8

Ingredients

    chopped vegetables, can include:
    onion
    broccoli
    cauliflower
    mushrooms
    zucchini
    peppers

    olive oil

    salt and pepper to taste
    thyme or other herb

Directions

Place all veggies in a 13x9 casserole sprayed with nonstick cook spray. Season with salt, pepper, herbs, and drizzle with oil. Roast at 425 for 35 to 40 minutes, stirring about every 5 to 7 minutes.
