Number of Servings: 16

Ingredients

1 pound bacon, cut into matchstick size pieces
    1 can diced tomatoes
    3/4 c Panko bread crumbs
    3 T flour
1 pound small pasta (radiatore, elbow, etc)
    4 c milk
    1/4 t nutmeg
    8 oz cheddar, grated
    8 oz gruyere, grated
    3 T olive oil

Directions

Makes 16 VERY filling servings. This can easily be a main course.

Heat saute pan over medium low heat and cook bacon until crisp. Remove bacon and drain all but 3 T of the fat.

Butter large baking dish, add 1/4 c Panko and shake to coat.

Cook pasta until al dente (do not overcook!), ~7-8 minutes. Drain and set aside.

Heat oven to 350 degrees.

Whisk flour into bacon fat and cook while stirring for 2 minutes. Whisk in milk. Heat to a simmer while whisking frequently for 10 minutes until nicely thickened. Season with salt, pepper and nutmeg.

Remove sauce from heat and add cheese, stirring until fully combined. Add bacon, tomatoes, and pasta and mix well.

Pour into prepared baking dish. Sprinkle remaining 1/2 c Panko atop the mac 'n cheese, and drizzle the olive oil atop the Panko.

Bake at 350 degrees for 45 minutes until golden brown and bubbly.

Number of Servings: 16
