Smothered "Aussie" Chicken

Number of Servings: 4

Ingredients

    2 boneless, skinless chicken breasts, cut in half, making 4 pieces
    4 slices bacon, cooked and drained
    1/4 cup spicy brown mustard
    1/4 cup honey
    1 Tbsp minced onion
    1 cup cheddar cheese, shredded

Tips

Cook the bacon before topping the chicken, otherwise it doesn't get crispy. Sautéing the chicken before baking gives it much more flavor.


Directions

Sprinkle breasts with salt and pepper, if desired.
Saute breasts, about 2 minutes per side, until a little browned. Place chicken in 8x8 inch pan.
Mix mustard, honey and onion in a small bowl and pour over chicken.
Top each chicken breasts with 1 piece of bacon and 1/4 cup of cheese.

Bake at 375 degrees F for 20-30 minutes, until juices run clear.
