Orange Almond Cranberry Biscotti (1svg=1pc)

Ingredients

    - 12 oz (2-2/3c) a/p flour
    - 1-1/2c granulated sugar
    - 2 t baking powder
    - 3/4 t salt
    - 1/4 c slightly packed grated orange zest
    - 1 c whole almonds
    - 1 c dried cranberries
    - 3 large eggs
    - 5 T olive oil
    - 3 T orange juice concentrate (or 1T OJ + 1T liqueur)

Directions

Preheat oven to 350*F. Mix flour, sugar, baking powder, salt & zest in large bowl, breaking up clumps. Stir in almonds & cranberries. Separately whisk together eggs, olive oil & concentrate & stir into dry ingredients until well combined. Dough will be sticky. Shape into two logs on well floured board, transfer to parchment lined baking sheets & flatten slightly. Bake in centre of oven until golden & tops are fairly firm at centre (approx 22-25 minutes), rotating sheet & reshaping logs with spatula as necessary. Cool on racks. Slice diagonally into 1/2" slices with serrated knife. Bake cut side down at 350*F for approx 6 minutes. Turn & continue baking for 8-10 minutes or until golden. Cool on pans for 5 minutes then transfer to racks. Store in air tight container at room temperature.

Serving Size: Approx. 60 1/2" thick biscotti
