'Shroom n' Spinach Thick-Rich Pasta Sauce

Ingredients

    * 1 cup Classico Sun-dried Tomato Pasta Sauce
    * 1 tbsp. Olive Oil
    * Fresh-ground Sea Salt and Black Pepper, to taste (NOT included in nutritional calculations!)
    * 1/2 tsp. Thyme, dried
    * 1/2 tsp. Basil, dried
    * 1 1/4 cups Red Onion, chopped [About 1/2 large-sized onion.]
    * 4 cloves Garlic, minced
    * 3 cups Baby Portabella (Crimini) Mushrooms, sliced [An 8 oz. pkg., trimmed.]
    * 2 1/2 cups Roma Tomatoes, chopped [About 5 Roma tomatoes.]
    * 3 cups Baby Spinach, coarsely chopped

Directions

1. In a medium sized pot, heat the Classico sauce over medium-low heat.
2. Meanwhile, in a large skillet, heat 1 tbsp. olive oil, salt, and pepper over medium-high heat. Also add the dried spices to the oil at this time. (NOTE: 1 tsp. Italian Seasoning could easily be used in place of the thyme and basil!)
3. Add the onions and garlic and sautee for a few minutes, until the onions start to caramelize.
4. Next add the mushrooms, and sautee for a few minutes more.
5. Finally, add the chopped tomatoes, and cook for a few minutes more.
6. Transfer the sauteed vegetables from the skillet to the pot with the Classico sauce, add the spinach, stir and heat through until the spinach is wilted.
7. Stir and heat until it starts to bubble, reduce heat, and simmer for about 15 minutes (un-covered) to reduce the liquid a bit.
8. Makes three 'servings', each about one heaping cup-full each. Enjoy! :)
