Easy crispy Pizza crust

This is a great recipe for pizza or focaccia. Makes two medium thick crusts. For a less chewy crust omit olive oil and increase water to 1 cup. This is a great recipe for pizza or focaccia. Ingredients

4 cups whole wheat flour
2 tsp instant yeast
3/4 cup very warm water [115-120F]
1/4 cup olive oil
1/2 tsp salt
drizzle of oil to coat bowl [not included]
Tips
If you use all purpose flour, decrease the yeast to 1 tsp.
Eliminating the olive oil makes for a crispier crust.
Directions
Place 3 cups of flour in a medium sized bowl. Add salt and yeast, stir.
Add water and oil. Mix until well combined. Add more flour as needed.
Turn out onto a floured board or countertop. Knead until dough is smooth and elastic. [About 5 minutes]
Drizzle oil into bowl and return dough to bowl, turning the ball of dough to coat with oil. Cover with plastic wrap or a towel and let rise until double in size [approximately 45 minutes].
Punch down and divide in half. Roll or stretch to fit pans.
Add toppings and bake in a 500F oven for 5 minutes [cheese only pizza] to 7 minutes [loaded]. For focaccia, the time is approximately 12 minutes.
Serving Size: two 12" pizza shells, cut into 8 slices each
