    Celery, raw, 2 cup, diced
    Zucchini, 2 cup, sliced
    Onions, raw, 1 cup, chopped
    Cauliflower, raw, 1 cup
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Lentils, cooked 1/2 cup home cooked, 4 serving
    *Extra Virgin Olive Oil, 1 tbsp
    Vegetable Broth, 4 cup

  • Directions:
    1. In stock pot, sauté carrots, onion & celery in olive oil until soft.
    2. Add cauliflower & sauté until slightly soft.
    3. Add broth & lentils (I also add chopped garlic). Bring to boil & simmer 20 min.
    4. Add tomatoes & zucchini. Simmer ~10 min.
    5. Add salt & pepper to taste. - 11/8/13
