1/2 cup chopped cantaloupe
1/2 cup sliced strawberries
1/2 cup sliced kiwifruit or honeydew melon
1/2 banana, sliced
1 cup vanilla artificially sweetened low-fat yogurt
2 tablespoons sliced almonds, toasted*
*To toast nuts, bake uncovered in ungreased shallow pan in 350° oven about 10 minutes, stirring occasionally, until golden brown. Or cook in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
This tasty fruit and yogurt combination has all the calories and carbohydrates you need for a hearty breakfast. It also makes a great lunch or between-meal snack.
Top with almonds.
