Mexican Skillet

Number of Servings: 4

Ingredients

    1 lb ground chicken
    1 large zucchini (2 cups chopped)
    1 yellow bell pepper, chopped
    2 cloves garlic, chopped
    2 tbsp cumin
    Salt and pepper to taste
    1 cup frozen corn (Trader Joe's fire roasted corn)
    1 cup black beans
    2 chipotle peppers & 2 tbsp adobo sauce
    2 16 oz. jars salsa (used Spike's black bean & corn)

Directions

Brown chicken over medium heat. Add zucchini, bell pepper, garlic, cumin, salt, pepper and salsa. Cook for 10 -15 minutes. Add corn, black beans and chipotle peppers and cook for another 5 minutes or until everything is heated through.

Serving Size: Makes 4 servings
