Chicken Stir Fry with a Kick

Introduction

Ingredients

    Onion - Red/Purple - 1/2 Cup thinly sliced
    Zucchini, .5 cup, thinly sliced
    Bok Choy, raw-shreaded, 2 cup
    Bean sprouts, 1 cup
    Chicken Breast, no skin, 12 ounces
    Thai Chili Sauce, .5 tbsp
    Soy Sauce, .5 tbsp
    Sesame Oil, 1 tbsp

Tips

Save out 1/2 the oil for stir frying the vegetables. If you eat rice, this is good served over brown or multi grain rice. It would also work over grated cauliflower instead of rice if you're on a low carb diet.


Directions

Thinly slice onion and zucchini. Chop and set aside vegetables.

Chop into bite sized pieces and stir fry the boneless, skinless chicken breasts in 1/2 tablespoon sesame oil (or oil of your choice) then add vegetables, 1/2 a tablespoon of chili sauce, 1/2 a tablespoon of soy sauce, and other 1/2 tablespoon of sesame oil and stir fry briefly till bok choy wilts and zuchinni has the consistency of al dente pasta.

Serving Size: Makes 4 servings of about a cup each
