Puerto Rican Rice #1

Ingredients

    4 oz. stew meat, cut fine
    1 c. shredded cabbage
    2 small carrots, grated
    2 cloves garlic, minced
    2 green onions sliced fine
    1 1/2 c. diced fresh tomato
    1/4 c. chopped canned chili peppers
    2 Tsp. Vegetable oil
    2 c. long grain white rice
    1/4 tsp. each, chili powder, garlic powder, and paprika
    5 c. hot tap water

Tips

You can make a lot of varieties of this dish by the vegetables you use and the meat you use. Be sure and adjust the calorie count accordingly.


Directions

Brown stew meat in vegetable oil. Add vegetables and cook for 10 minutes, stirring often. Add rice and enough water to cover all by 1/2 inch. Stir until blended. Cover and reduce heat to medium low. Cook for 25 minutes. Stir and test Rice. Meal is ready when rice is cooked thoroughly. If not done after 25 minutes make sure you stir thoroughly and cover for additional time.
