Potato Soup

Introduction

This soup is so delish!! This soup is so delish!!
Number of Servings: 12

Ingredients

    15 ounces Chicken Breast (Boneless)
    8 cups of Cubed Potatoes
    2 cups of Chopped Onion
    1 cup of Half & Half
    1/4 cup of White Flour
    1/4 tbsp. Garlic Powder
    1/4 tsp. Cajun Seasoning
    1/4 cup of Olive Oil
    1/4 tsp. Salt or Season to Taste
    1/4 Black Pepper or to Taste

Directions

Boil Chicken with seasonings until tender, approximately 45 minutes. I use the bagged boneless chicken breast. Remove chicken and chop into pieces. Saute onions in olive oil until translucent. Reserve one cup of chicken broth and then add the diced potatoes and sauteed onions and boil until tender. (about 20 minutes) I try not to over-boil because I like the potatoes more firm and not really pureed in my soup. In a medium skillet add the flour, half & half and 1 cup of broth and stir until thickened..about 10 -15 minutes. When thickened add to potatoes. Simmer for approximately 30 minutes.
