Mexican Green Rice (Arroz Verde)




Number of Servings: 4

Ingredients

    2 Jalapeno Peppers
    1/2 cup Cilantro, raw
    1 packed cup baby spinach
    2 cups Chicken Stock, Homemade, defatted
    1 medium Onion, raw, diced
    3 tbs olive oil
    3 cloves Garlic, minced
    1 cup Brown Rice
    1/4 tsp Sea salt

Tips

This is a handed-down version of an authentic Mexican dish, mostly the same as Ingrid Hoffman's.


Directions

Add the jalapenos, cilantro, greens, chicken stock and salt to a blender and combine until pureed. Saute the onion in the olive oil in a medium pot until starting to brown. Add the garlic and rice and saute for another minute. Add the green puree, cover and bring to a boil. Reduce heat and simmer for 35-45 minutes, until rice is tender. Season with black pepper, if desired.

Serving Size: Makes 4 generous half-cup servings
