Ironed Stuffed Tortilla

Introduction

Ingredients

    2 Tbs. chopped onion
    2 Tbs. chopped tomato
    3 Tbs. grated white Cheddar cheese
    3 Tbs. grated aged Cheddar cheese
    1 marinated or fresh jalapeno
    2 Tbs. cream cheese
    2 Tbs. cilantro/parsley/ basil, etc
    120 g. left over cooked chicken/ham/turkey, etc., thinly sliced

    1 flour tortilla or corn tortilla

    Aluminum foil

    Electric clothes iron

Directions

To make the stuffing for the tortilla, mix the chopped onion, chopped tomato, grated cheeses, some of the jalapeno peppers, cream cheese, chopped cilantro and sliced chicken breast together in a bowl.

Lay a tortill flat on the chopping board and spoon the mixture in to the center. Roll the tortilla up barrito style.

Double wrap the torilla in aluminum foil, making sure it's entirely covered. Flatten slightly.

Turn the iron on to a medium heat and place on the surface of the aluminum for 30 seconds at a time per side. Heat this way, switching sides, for 5 minutes. Spray steam each time to speed things up. NOTE: Do not move iron back and forth.

Let cool for 5 minutes before unwrapping. Slice diagonally and enjoy.
