Breaded Parmesan Chicken (Diabetic friendly)

Number of Servings: 6

Ingredients

    1/2 cup Stuffing, herb, dry mix
    3 tbsp grated Parmesan cheese
    1 tbsp dried parsley
    1 tsp curry powder
    1 tbsp italian seasoning
    3 tbsp unsalted butter
    6 boneless skinless chicken breasts

    Pasta Sauce / Marinara Sauce
    Pasta
    Cheese

Directions

1 - Preheat oven to 350 degrees F.
2 - In a small shallow dish combine the stuffing mix, cheese, parsley, curry powder, and seasoning. Mix together.
3 - In an 8 x 11 inch baking dish, melt the butter/margarine in the microwave.
4 - Dip the chicken breasts in the stuffing mixture, coating both sides of each breast.
5 - Place chicken in baking dish and sprinkle any leftover stuffing mixture over the chicken.
6 - Bake for 20 minutes, then turn chicken pieces over and bake for another 20 to 25 minutes or until chicken is cooked through.

** Add Ins **
Cook pasta per package directions. Strain. One serving to a plate, chicken on top. Heat pasta sauce, (one serving on top of chicken) and then mozzarella cheese on that. Put plate under broiler for a moment to melt cheese, if desired.
