Olive Garden Minnestroni Soup

Ingredients

    3 Tbsp. olive oil
    4 tsp. garlic
    1 cup chopped onion
    1/2 cup Italian Green beans
    1/2 celery stalk, chopped
    1/2 zucchini, chopped
    1 can diced tomatoes, drained
    1 can kidney beans, drained
    1 can cannonelli beans, drained
    1/2 cup sliced carrots
    3 cups water
    4 cups vegtetable broth
    2 tsp. parsley
    1 1/2 tsp., oregano
    1 1/2 tsp., salt
    1/2 tsp. black pepper
    1/2 tsp. basil
    1/4 tsp. thyme
    1/2 cup whole wheat pasta shells
    4 cups spinach

Tips


Directions

Sautee garlic thru zucchini in olive oil, about 5 minutes in large soup pot. Add diced tomatoes through spices. Bring to a boil. Simmer 20 min. Add spinach and pasta. Simmer 20 min.
