Summer Frozen Fruit Bars

Make your own popcicles. Make your own popcicles.Ingredients
- 2 cups cut-up summer fruit (strawberries, peaches, watermelon, etc.)
- 1 tablespoon sugar
- 1 teaspoon fresh lemon juice
Directions
1. Place the fruit in a blender. Cover and blend until smooth.
2. Add 1-2 tablespoons water, if necessary. Add sugar and lemon juice. Cover and blend until well mixed.
3. Pour into 4 oz. ice-pop molds or paper cups. Insert sticks. Freeze until solid.
Serves 4.

I love these for the summer months. I especially love mixing strawberries and blueberries together. I also added a splash of skim milk and 1/4 cup low fat yogurt for an extra creamy popcicle. I used granulated splenda instead of sugar.
I've also tried it with frozen tropical fruits...wonderful. - 6/21/10

Very refreshing! Instead of making individual "pops," I doubled the recipe, using watermelon & strawberries and 1/2 oz of Kirschwasser, then put it in an ice cream maker to make a sorbet. Kirschwasser added a couple of calories but kept it from freezing too solid. Just don't give it to the kids! - 6/3/11

This is easy and great. Could almost fool yourself that you're eating ice cream. Hint I did this with white peaches because I have a tree and had them. IMHO white peaches don't have much flavor beyond sweet so we're going to add things like cocoa, vanilla or? get a variety of flavors from 1 fruit - 6/22/10
