Half head of cauliflower broken into bite sized pieces
1/4 cup of diced raw zucchini (or celery)
1/4 cup diced red onion, to taste
1/4 cup diced pickle, to taste
1/3 cup Olive Oil Mayo
3 hard boiled egg whites, diced
1 tsp yellow mustard
salt, pepper, garlic to taste
Use steamed cauliflower to replace the potatoes in your favorite potato salad recipe.
Mix all ingredients in a bowl until combined. Serve immediately or store in fridge over night.
Serving Size: Makes six 1/2 cup servings
