Introduction

Classic Potato Salad with steamed cauliflower replacing the potatoes, lowering the calories and the carbs. Classic Potato Salad with steamed cauliflower replacing the potatoes, lowering the calories and the carbs.
Number of Servings: 6

Ingredients

    Half head of cauliflower broken into bite sized pieces
    1/4 cup of diced raw zucchini (or celery)
    1/4 cup diced red onion, to taste
    1/4 cup diced pickle, to taste
    1/3 cup Olive Oil Mayo
    3 hard boiled egg whites, diced
    1 tsp yellow mustard
    salt, pepper, garlic to taste

Tips

Use steamed cauliflower to replace the potatoes in your favorite potato salad recipe.


Directions

Steam chopped cauliflower until just tender, not mushy. (I do this in a Ziplock microwave steam bag, use any method you like) and run under cold water in a colendar, pat dry.

Mix all ingredients in a bowl until combined. Serve immediately or store in fridge over night.

Serving Size: Makes six 1/2 cup servings
