Number of Servings: 6


    1 large bunch of fresh, whole collard greens, washed and separated into individual leaves
    1/2 of a block (6 ounces) of firm tofu, drained & pressed, cut into small cubes or strips
    6 Tablespoons reduced fat feta cheese
    2 cups canned black beans, drained and rinsed
    4 Tablespoons Lite soy sauce
    1 Tablespoon Asian Chili Paste (or to taste)
    1/2 cup of hummus
    1/2 cup green onions, chopped
    1 1/2 cups cherry tomatoes, cut into quarters
    1 cup cucumber, peeled and chopped
    1 cup fresh mushrooms, sliced
    1 cup lightly-packed alfalfa sprouts
    10 fresh basil leaves, chopped (or to taste)
    1/4 cup artichoke hearts, marinated in oil
    2 Tablespoons unsalted, dry roasted peanuts


No need to cook anything! Mix everything together gently except for the collard greens. Insert filling evenly into collard green leaves and roll up as you would a burrito. Serving Size: makes 6 large (or 12 smaller) satisfying wraps.
