Introduction

healthy curried lentils healthy curried lentils
Number of Servings: 1

Ingredients

    lentils, 1 cup dry
    4 cups low sodium veg or chicken broth
    1 carrot, diced
    1 med potato, diced
    1/4 onion diced
    2 tsp curry powder
    1 tsp turmeric
    other spices to taste

Directions

put lentils, broth in heavy pot with lid.
also add spices and onion
boil then simmer for 1 hour.
20 min before end add potatoes and carrots.
serve with a dollop of greek yogurt

Serving Size: makes 8 1/2 cup servings
