Potato and Bacon Hashbrowns

Number of Servings: 4

Ingredients

    2 - 3 medium potato, chopped into bite size pieces
    5 strips of bacon, diced
    1 small onion, diced
    1 small green pepper, diced
    1 tsp garlic powder
    1/8 tsp black pepper

Tips

Add cheese on top for a twist. Not included in nutrition facts.


Directions

In a texas skillet, add about a 1/4 cup of water and the diced potato, cover and simmer until the potato starts to soften.
Remove the lid, and let the water evaporate. Added bacon, onion and green pepper. Stir occasionally until bacon cooked and onion and green pepper soften.
Stir in garlic powder and black pepper.
Continue cooking over medium high heat until the potato and bacon start to crisp.


Serving Size: Makes 4 servings, Approx. 1 cup each
