Cashew Ginger Rice Bowl

Ingredients

    1/2 cup cooked brown rice
    1/2 cup bell pepper
    1/2 cup onion
    1/2 cup spinach
    1/4 cup low sodium vegetable broth (I use Pacific)
    2 Tbsp chopped cashews
    1 tsp low sodium soy sauce or tamari
    1/2 tsp fresh grated ginger

Tips


Directions

Cook rice according to package directions. Saute peppers and onion in vegetable broth until tender. Add spinach and cook briefly. Combine all ingredients.
