Broccoli Soup

Introduction

a quick and healhy soup a quick and healhy soup
Number of Servings: 4

Ingredients

    1 tsp olive oil
    1 small onion, chopped
    3 garlic cloves, minced
    5 cups broccoli, blanched
    2 medium size potatoes, diced
    4 cups low sodium chicken broth
    salt and pepper to taste
    dash of nutmeg (optional)

Tips

Can also use a blender to puree soup.
Serve warm with croutons or sprinkle with low fat cheddar cheese.


Directions

in large saucepan, heat olive oil. Add garlic and onion and saute until onion is softened. Add potatoes and broccoli, saute 2-3 minutes. Add Chicken broth and bring mixture to a boil. Reduce heat and cook until potatoes are tender 15- 20 minutes. Remove from heat, using hand blender puree soup until desired texture. Season with salt & pepper.
