Tamale Pie

Introduction

I got this recipe from a co-worker. I love it. It's so delicious and I would never have guessed it was made with Tofu! I got this recipe from a co-worker. I love it. It's so delicious and I would never have guessed it was made with Tofu!
Number of Servings: 9

Ingredients

    4 Green Onion Stalks, Chopped
    0.5 Block of Soft or Medium Tofu
    2 Tbsp. Lemon Juice
    1 to 2 Tbsp. Honey
    1 15.25oz. Can of Whole Kernel Corn, Undrained
    1 14.5oz. Can of Green Beans, Drained
    1 14.5oz. Can of Stewed Tomatoes
    1.5c. Fine Cornmeal
    1 3.8oz. Can of Sliced Black Olives, Drained
    1 Tbsp. Chili Powder*
    0.5 Tsp. Cumin*
    0.5 Tsp. Garlic Powder
    0.5c Shredded Cheese (Your Choice)
    1 4oz. Can Diced Chili Peppers (Optional)

Directions

1. Preheat oven to 350 degrees.
2. Saute Green Onions.
3. Blend Tofu, Lemon Juice, and Honey in a blender or food processor.
4. Mix together all ingredients and pour into a casserole dish.
5. Add Salt & Pepper to taste.
6. Sprinkle with Cheese evenly.
7. Back 35 - 40 minutes, or until cheese is golden.

*Note: Increase spices for a spicer dish.
