Enchilada Casserole w/Turkey

Ingredients

    Corn Tortilla 2 dz
    Enchilada Sauce (red) 2 14oz cans
    Turkey Ground 2 pounds
    Cheddar Shredded 2 8oz packages
    Black Olives Sliced 2 lg cans

    Seasoning:
    garlic
    pepper
    salt
    cumin
    chili powder

Tips

Top with salsa, sour cream, chives, guacamole.
Serve with salad!
I have used beef, sausages, and different cheeses. It always tastes good.


Directions

Brown turkey meat with seasoning (to taste), set aside.
Warm enchilada sauce in sauce pan. Spray casserole pan with non-stick.
Coat each tortilla with sauce, layer in dish so that the bottom and sides are covered in tortillas. May need to break a trotilla in half to cover.
Layer part of the meat in the dish, sprinkle layer of cheese, sprinkle some black olives, drizzle some sauce over the layer. Add another layer of tortillas to cover the meat (make sure tortillas are covered in sauce). Repeat layering. Final: One more layer or tortillas, light layer of shredded cheese, last of olives. Pour remaining sauce over casserole.
Bake uncovered, 30 minutes at 375.
