Vegetable Tofu Stir Fry

Number of Servings: 6

Ingredients

    0.5 medium white onion, chopped
    1 medium bell pepper, chopped
    2 cloves garlic, chopped
    1 pkg extra firm tofu
    1 pint of grape tomatoes
    1 bunch of collard greens
    2 tbsp sesame oil
    1/4 cup of parmesan cheese
    a handful of mozzarella
    Season to taste

Tips

Remember to serve with something from the bread group for a complete meal. I used 1/2 cup of Jasmine rice but you can use whatever you like.


Directions

Prep ingredients. Saute the onion and garlic in sesame oil. Add bell pepper and mix for another minute. Through in the tofu and stir while heating for another couple minutes. Toss in the tomatoes and greens when ready. Let cook with occasional stirring until greens are desired texture. Toss in the cheese and any seasonings. When cheese is melted, serve.
