Ingredients

Olive Oil, 1 1tsp
Onions, raw, 1 small, diced
Garlic, 2 cloves, diced
Stewed Tomatoes, 2 cup, I prefer fire roasted tomatoes
Artichokes, frozen, 1 package (9 oz),unthawed and chopped
Beans, white, 1 cup rinsed, I use cannelini
Atlantic Salmon (fish), 16 oz
Basil, 2 tbsp chopped
salt and pepper to tasted
Tips
Directions
In a skillet heat up the oil, add the garlic then onion, cook till translucent..then add tomatoes, simmer on low for ten minutes..then add artichokes and beans, simmer another ten mintues..add fish, spoon some sauce over, put the top on and let them cook for 7 -10 minutes..add basil and adjust your salt and pepper if needed..
Serving Size: makes 4 4ounce pieces with 1/4 cup of sauce
