Introduction

Number of Servings: 4

Ingredients

    1 c celery chopped
    1c onion chopped
    16 oz cubed raw chicken breast
    1/2 can tomatoes ( an be crushed pieces or whole; if whole chop)
    Water as needed
    1 Tbs curry powder or to taste
    1Tbsp cumin
    1Tbsp grated fresh ginger
    1/4 tsp cayenne pepper
    1 teaspoon Garam masala
    1/2 teaspoon anise seed
    1 Tbsp olive oil
    1/2 tsp salt

    For topping
    1 orange pepper diced fine
    4 green onions diced
    1 banana chopped
    1 fresh tomato chopped
    Fresh cilantro


Tips

Spices are suggestions add more, add less, change combinations.


Directions

Heat olive oil. Add onions and celery and cook until softened. Add curry cumin, ginger anise seed and cayenne and brown. If sticking, add a dash of water. Add tomatoes and chicken. Add salt to taste. Cook until chicken is cooked and sauce has thickened. Just prior to serving, add Garamond masala. Garnish with fresh cilantro.


Chop the other veggies and fruit (others can be added such as cantaloupe, peanuts, raisins , coconut cucumber etc. Serve with yogurt and other chutneys if you wish.
