Okra, 9 pods (3" long)
Zucchini, 1.5 cup, sliced
Eggplant, fresh, 1 cup, cubes
*Extra Virgin Olive Oil, 2 tbsp
*Creole Seasoning, Tony Chachere's, .5 tsp
Cut veggies into 1"cubes, toss with olive oil, and sprinkle with Creole seasoning.
Cook for 10 minutes, then switch oven to broiler and cook for remaining 5 minutes.
