Oyster Mushroom Stir Friy

Ingredients

    1 Tbsp sunflower oil
    2 Tbsp lite soy sauce
    6 oz oyster mushrooms, diced
    1 C red bell pepper, diced
    2 C broccoli, chopped
    1 C onions, diced
    2 cloves garlic, minced
    12 medium baby carrots, diced
    1 C zucchini, sliced
    2 Tbsp sliced almonds

Tips

Any vegetables can be used in this delicious stir fry! GREAT way to get your veggies in! Use whatever sounds good and is in season!


Directions

Heat oil in large skillet or wok. Add onions and garlic and saute until fragrant.

Add carrots and broccoli. When broccoli starts to turn bright green, add mushrooms and saute.

After about 5 minutes, add bell pepper and zucchini. Saute for another 5 minutes. Before removing from heat, add soy sauce and saute so it is mixed thoroughly.

Add almonds and serve.

Serving Size: Makes 2 equal servings
