Summer Squash and Cucumber Salad

Ingredients

    1 small cucumber (about 250g)
    1 small summer squash (about 250g)
    1/2 medium red onion (about 190g)
    Zest and juice from 1/2 lemon
    1/3 cup plain yogurt
    1 Tbs. fresh mint, chopped
    1 Tbs. fresh parsley, chopped
    1/2 tsp. black pepper
    1/4 tsp. salt

Directions

Slice squash and cucumber into half moons. Cut red onion into thin, bite-sized strips, about two inches long.

In a medium-size bowl, whisk yogurt, lemon zest and juice, mint, parsley, pepper and salt until well combined.

Add squash, cucumber and red onion to the bowl. Toss the mixture until the vegetables are coated with the yogurt dressing.

Pair with somthing off the grill.

Serving Size: Makes 2 servings
