Introduction

Number of Servings: 8

Ingredients

    1 can tomato sauce
    1 small eggplant, peeled, diced
    1 med green pepper, chopped
    1 large onion, chopped
    1 med zucchini, chopped
    3 cloves garlic, chopped
    8 oz package of chicken breast, diced
    8 oz of pasta shells
    fresh basil, chopped, 4 tbsp
    fresh oregano, chopped, 2 tbsp
    fresh marjoram, 1 tbsp, or 1 tsp dried
    fresh thyme, 1 1/2 tbsp, or 2 tsp dried
    1 small can sliced black olives
    mozzarella, part skim, 4 oz, cubed
    salt and pepper

Directions

Put tomato sauce in saucepan to heat. Add garlic to sauce. Saute vegs in olive oil in batches, then add to sauce. When all vegs are added, blend smooth. Add herbs. Meanwhile, cook pasta in boiling water. Saute chicken in olive oil and add to sauce. Finally add cubed mozzarella cheese and sliced olives. Drain pasta and pour sauce over.
