1 cup eggbeaters original all whites
1/4 cup shredded part skim mozzarella cheese
1/4 cup chopped whole green chiles
2 tbs Sadie's salsa - hot
You can also add a 1/4 cup of chopped raw red onion for a little crunch. Omitting the salsa cuts down the sodium a lot, or you can use home made salsa.
Put the eggbeaters in bowl and whisk briskly, then pour into heated skillet.
Give the omelet a minute for the bottom to start setting up, then spread chiles, mozzarella, and salsa on top.
Fold sides up, and after it starts to firm up, flip it once to cook completely.
Serving Size: makes 1 large omelette
