Bean soup

Number of Servings: 10

Ingredients

    1 pound navy or other dry beans, sorted and washed
    1 quart chicken or vegetable broth
    2 cups chopped potato
    2 cups chopped carrot
    1 onion, chopped
    2 large celery stalks, chopped
    3 cloves garlic, minced
    1 cup chopped ham (may be omitted)
    salt and pepper
    1 bay leaf
    3 sprigs thyme
    3 tbsp chopped fresh parsley

Directions

Soak beans overnight, or cover with very hot water and soak 1 hour. Drain, rinse, cover with cold water. Add chicken broth and cook til tender. Add vegetables, ham and seasonings. Simmer til veges are tender. Remove bay leaf and thyme before serving.
