Introduction

I like to make this at the beginning of the week and then eat for lunch throughout. It's easy to put together and cheap. I'm pretty quick with a knife so it never takes long for me to put together either. I like to make this at the beginning of the week and then eat for lunch throughout. It's easy to put together and cheap. I'm pretty quick with a knife so it never takes long for me to put together either.
Number of Servings: 6

Ingredients

    Chickpeas (garbanzo beans), 6 cups
    Cucumber (with peel), 1 cucumber (8-1/4") chopped
    Red Ripe Tomatoes, 2 medium whole chopped
    Carrots, raw, 3 medium chopped
    Cauliflower, raw, 2 cup chopped
    Onions, raw, .5 cup, chopped
    *Canola Oil, 2 tbsp
    Lime Juice, .25 cup

Directions

Mix, season to taste and enjoy. THe longer it marinates the better.

Serving Size: Makes 6 servimgs that are 2 cups each
