I large head of broccoli or cheat and use the already chopped fresh broccoli in the produce aisle
1 small red onion finely chopped
1 box of multi colored rotini noodles
1 bottle of Kraft coleslaw dressing (in some places you can get a light version of this)
3/4 bag of reduced fat cheddar cheese
I have seen many people tweak this receipe in different ways. You can make your own dressing with light mayonnaise or miracle whip and use zero calorie sweetner to taste. I have also seen people add crumble bacon, ham, or chicken and make this more of a meal. Go crazy and be creative!
Serving Size: This makes roughly 8 3oz servings. Sometimes I can get more or less depending on how big the broccoli is.
