Zucchini and Onions Stir Fry (1 cup=2 freggies)

Introduction

This is a lighter version of the grilled zucchini and onions I enjoyed on the hibachi grill at Ginza of Tokyo This is a lighter version of the grilled zucchini and onions I enjoyed on the hibachi grill at Ginza of Tokyo
Number of Servings: 3

Ingredients

    1/2 tsp olive oil (or 2 second spray of non-stick spray)
    260 grams zucchini, rinsed and cut into bite-size sticks
    130 grams onions, peeled and cut (bite-size)
    1/4 tsp crushed red pepper flakes
    1/2 tsp sesame seeds
    1 tsp black or low sodium soy sauce

Directions

1) Coat and heat 1/2 tsp olive oil on base of non-stick skillet on medium heat

2) Add separated chuncks/pieces of onion, bite-size zucchini sticks, crushed red pepper flakes and sesame seeds. Stir fry lightly tossing throughout for 3-5 minutes (depending on how high your heat it).

3) Add soy sauce tossing lightly and serve immediately.

Feel free to garnish with cilantro or chives or add your favorite spices (garlic, cumin, corriander, salt, etc) to suit your tastes (not included in the nutritional information) during the light stir fry process.

Serving Size: Makes 3 1-cup (2 freggie) servings
