Joanna's onion pasta toss

Ingredients

    Pork Tenderloin, 16 oz cubed
    Onions, raw, 6 large finely sliced
    Red Wine, 4 fl oz
    Low Sodium Chicken Broth, 2 cup
    Pasta, cooked, 12 oz
    Olive Oil, 2 tbsp
    Parmesan Cheese, hard, 4 oz

Tips

may use beef or pork and use many different types of onions or onions of your choice. Suggest use red, yellow and white combination. Wine should be slightly sweet variety.


Directions

Sear the pork cubes in 1 tablespoon of the olive oil. Remove from pan and add onions and 1 tablespoon of olive oil. When onions begin to sweat, add the wine and broth (or water if you prefer). Return pork to pan and stir together. Cover and simmer for hours until the sauce forms and is consistency you desire. Add wine and/or broth to your liking. Cook pasta of choice al a dente and serve.
