Macaroni & Lycopene Chicken

Ingredients

1, 4 oz skinless Chicken beast
85 g (approx 3 oz) dry, enriched macaroni noodles, small
411 g (approx 14.5 oz) sliced, stewed tomatoes
120 g (1 small can) Old El Paso Chopped Green Chiles
8 Tbl Pace Chunky Mild Salsa
1 tsp Cholula Hot Sauce (or 1/2 tsp Tabasco)
1 tsp ground black pepper
3 large onion slices, cut in half
0.5 cup Green (Bell) Pepper slices
4 cups water, divided
Directions
Place Chicken breast in small pan and cover with 2 Cups water. Bring to boil, then reduce heat to simmer (approx 30 minutes). When chicken is done, remove and cool. When cool, cut into bite size pieces.
Place dry macaroni in 3-4 qt pot. Add cooking water from chicken (approx 1.5 cups) and remaining two cups water. Set to boil.
Add remaining ingredients. When water boils, reduce heat to simmer, stirring occasionally.
Dish is done when macaroni is done and water is no longer standing in pot.
Makes 5, 1 cup servings. Lots of lycopenes and anti-oxidents!
If you like a spicier dish, add Cholula Hot Sauce or Tabasco after serving.
Unless you're a salt-o-holic, there is enough salt in the ingredients. Don't add salt until you've tasted!
