Tomato Pasta Soup

Introduction

It's heartier than soup, thinner than stew. It's heartier than soup, thinner than stew.
Number of Servings: 6

Ingredients

    1 cup celery, diced
    1 cup carrots, diced
    1 cup onion, diced
    2 Tbs. olive oil

    4 cups vegetable broth
    1 (15 oz.) can tomato purée
    2 cup ditalini (pasta)
    Salt & pepper, to taste
    1/2 cup grated parmesan cheese

Directions

In a large pot cook vegetables in olive oil until tender.

Add broth and tomato purée; bring to a boil.

Add pasta and cook until al denté; season with salt and pepper.

Serve sprinkled with cheese.
