Zip and Crunch Chicken Salad

Ingredients

1 can, 10 oz, white chicken meat in water
1/2 C plain, fat free, Greek Yogurt
1 C diced red/orange pepper
1 C diced Jicama
2 stalks celery diced
1 tsp onion powder
salt/pepper to taste
Tips
Keeps in the frig all week, I like to take the salad ingredients to work then mix them at lunch time. Keeps them all fresh and ready to go.
Directions
Mix all ingredients and chill for a bit. Add other spices to suit your taste, I like some red pepper flakes and a touch of garlic in mine. Change up veges as well, I like the zip of Jalapeno and the crunch of Jicama.
Use as a sandwich filling in whole wheat pita, add some tomato slices with a side of fruit makes a great lunch. Or serve on a bed of spinach and greens for a great salad. No dressing needed!! Add some chopped walnuts or almonds to bring up the protein and good fat but careful of the calorie hike!
