Tuna Noodle Casserole

Ingredients

    2 cups enriched egg noodles
    1 can tuna packed in water
    1 cup frozed peas
    1 cup chopped mushrooms
    1 can 98% fat free cream of mushroom soup
    1/2 cup skim milk
    1 serving Ritz crackers (5 crackers), crushed

Directions

1. Preheat oven to 375
2. Bring 4 cups water to a boil; add egg noodles and boil about 3 minutes (noodles should still be firm). Immediately shock the noodles in cold water, then transfer the noodles to a 2 quart casserole dish.
3. At the same time, mix the milk and soup in a pan. Bring to a simmer. Add the tuna; whisk until tuna is broken apart. Add the peas and mushrooms. Mix in the vegetables; pour the entire mixture over the egg noodles. Use a spoon to mix the ingredients thouroughly. Sprinkle the Ritz crackers over the top of the mixture.
4. Bake for 25 minutes covered; remove cover and bake 5 additional minutes.

    Sounds really good. I've never tried adding the crackers to the top. I usually add about a cup of shredded cheddar/jack cheese (fat-free) that way the cassarole contains something from all the main food groups. - 2/2/09

  • MADE THIS TODAY. MY HUSBAND LOVED IT. I CUT EVERYTHING IN HALF EXCEPT THE TUNA AND A LITTLE EXTRY MILK SO IT WOULD SERVE 2 INSTEAD OF 4. WE DEFINATELY WILL HAVE IT AGAIN. - 2/4/09

  • Very good. I've made this same recipe for years. It is delicious. I also, for variation, will use Healthy Request Cream of Celery Soup as well -- or even Healthy Request Cream of Chicken (my husband doesn't like the mushroom taste so we eliminate the mushroom soup). - 1/10/09

  • I'm going to try this because of all the wonderful comments, but when I figure the calories I come up with about 250 calories per serving. When I check the ingredient details it shows only half the amounts of the recipe for 4 servings. - 10/27/08

  • This is the way I have always made it, as well. It's one of our favorites. My Mom used to make it with cream of asparagus soup and no mushrooms because she does not care for them. - 9/9/08

  • I sauteed half a chopped onion and two stalks sliced celery until soft before adding the soup, milk, and other ingredients, which I increased to double the recipe. I also added some freshly ground black pepper. Very nice! Made 8 servings at 279 calories each. - 3/8/08
