Ingredients

Skim Milk, 1 cup
Cheddar or Colby Cheese, Low Fat, 1/2 cup, shredded
Mushrooms, fresh, 1/2 cup pieces
Ham, extra lean, (5% fat), 1/2 cup, diced
Broccoli, cooked, 1 cup, chopped
Onions, raw, 1/4 cup, chopped (r
Pepper, black, 1/2 tsp
Garlic powder, 1/2 tsp
Tips
You can use any vegetables you have in the fridge, substitute the ham for tuna or change the type of cheese.
Directions
Heat oven to 350F (180C)
Spray muffin trays with a little canola.
In a skillet lightly saute all ingredients except the milk, eggs and cheese. Put a small amount in each muffin hole, top with a small amount of the cheese.
Beat together the eggs and milk and fill the muffin tins.
Cook until set in oven. Remove and cool
Serving Size: Makes 12 small muffin sized frittatas
