Zucchini Rice Scramble

Introduction

Made this for breakfast one morning; inspired by Uncle Darryl's suggestion. Made this for breakfast one morning; inspired by Uncle Darryl's suggestion.
Number of Servings: 2

Ingredients

    2 tablespoons olive oil
    1 cup brown basamati rice, cooked
    1 cup shredded zucchini
    1/4 cup onion
    1 teaspoon turmeric
    salt & pepper to taste

Directions

Heat olive oil in skillet. Cook onion until tender. Add zucchini, cooking for about 3 minutes. Add rice to heat through. Push ingredients aside in pan to make room for egg. Add egg to space in pan. Cook 2 minutes, until set. Stir egg in with the rest of the ingredients in pan. Add turmeric, salt and pepper.

Serving Size: Makes 2 - (1) cup servings
