Introduction

Number of Servings: 18

Ingredients

    2 cups unbleached all-purpose flour
    2 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/2 cup sugar
    1 1/2 cups apple juice
    1 medium apple, peeled, cored and chopped
    2 ripe bananas, mashed
    1/2 cup blanched almonds, chopped


Tips

i cooked mine for probably closer to 25-30 minutes and they did just fine. :)

I also used regular white all-purpose flour because i didn't have the unbleached on hand. worked fine

Directions

preheat oven to 325.

spray muffin pan lightly with nonstick cooking spray (i used the butter flavored spray)

Combine the dry ingredients and mix well. Add the apple juice, apple, banana and almonds and stir well. Fill the muffin cups two-thirds full. Bake for 20 to 25 minutes, or until slightly raised and lightly browned.

THESE WILL NOT BROWN ON TOP
