Cicken Adobo

Ingredients

    # Chicken Breast, no skin, 3 breast, bone and skin removed
    # Chicken Breast, no skin, 3 breast, bone and skin removed )
    # Water, tap, 2 cup (8 fl oz) (remove)
    # *Kikkoman Lite Soy Sauce, 4 tbsp (remove)
    # white vinegar, 1 cup
    # Garlic, 10 cloves (
    # Pepper, black, .25

Directions

Cut breast into six servings. put in large pan.
peel garlic and add to pan
add water, enough to cover chicken.
add vinegar and say sauce. DO NOT STIR.
add pepper and bay leaf.
heat to boiling reduce heat to med low and simmer for 15 to 20 min.

take separate large fry pan. spray with cooking spray or at a couple tbs veg oil and heat. Remove garlic and add to fry pan. press and fry garlic till lite brown. add chicken and fry till browned turning to coat both sides with garlic.
After browning chicken, add sauce to chicken. return to boiling, reduce heat and simmer 10 to 15 min. longer if you want to reduce liquid more.
remove bay leaf and serve over white or brown rice.

This is an adaptation of my mothers recipe from the Philippines. Our family originally used a whole chicken with skin on and served over white rice. There are many different versions of Adobo depending on what part of the Phillipines it is from. Our version is a little lighter. I hope you enjoy it.
