1/2 cup bestlife buttery spread (WalMart)
1 cup flour
1 tbsp baking powder
1 cup sugar
1/8 tsp salt (optional)
2/3 cup milk
2 cups fresh or frozen blackberries
You can top this with ice cream if you can afford the calories. I like to use light or fat free cool whip.
Put buttery spread into an 8x8 pan and place in oven to melt while you prepare the other ingredients. Its a good idea to make the spread into small pieces to help it melt faster.
Mix well all other ingredients EXCEPT blackberries
Pour into the pan once butter has melted.
DO NOT STIR... just let the batter ribbon into the pan. Try to get it into the corners as well. It will expand to fill in spaces.
Carefully SPOON the berries onto the batter. DO NOT STIR.
Pop into the oven for 30 to 45 minutes. Depends on how your oven cooks.
When ready to eat, divide into 12 sections. Or 9 for larger servings of 205 calories.
