Creole Okra Gumbo
1 package Pictsweet Seasoning Blend - if not available, can use 2 cups onion, 3-4 cloves garlic, 1 cup celery, 1 cup green bell pepper
3 ounces Linguica or smoked sausage
8 cups okra - fresh or frozen, sliced
8 cups tomatoes - fresh or canned, diced
2 Tbsp basil
2 Tbsp ground sage
salt and pepper to taste
In New Orleans, this dish is served over fluffy white rice. For REAL Creole cooking, try adding shrimp and crab meat, along with the linguica. The seafood should be added right at the very end, as they cook quickly. Taste and season once more.
For vegetarians, omit linguica for a delicious okra gumbo.
