Ingredients

    4 cups shredded zucchini
    1 onion, diced
    1-3 garlic cloves, minced
    1 Tbsp Olive Oil
    1.5 cups Nonfat cottage cheese
    1 cup shredded cheddar cheese

Tips

Experiment with different types of cheeses and LOTS of different flavors as a modification. You can also substitute different types of squash or even spinach or other veggies for the zucchini.

Directions

sweat onion in olive oil with garlic; squeeze excess liquid from shredded zucchini, and heat with onion to dry somewhat; beat egg and mix with cheeses; combine vegetable mixture with egg/cheese mixture (add any other vegetables, seasonal herbs, spices, etc. that you like). Spray pie plate with non-stick spray and pour in mixture. Bake at 400 for 45 minutes or until the top begins to brown and the texture is relatively firm.
