Cauliflower Salad (fake potato)

Introduction

I think the official name for this salad is No Potato Potato Salad but I renamed it Cauliflower Salad so that it gets sorted correctly. I think the official name for this salad is No Potato Potato Salad but I renamed it Cauliflower Salad so that it gets sorted correctly.

Ingredients

    2 large heads raw cauliflower, broken into florets
    2 medium red sweet peppers, chopped
    20 green onions, white parts only chopped
    1/2 cup Kraft Miracle Whip Fat Free Dressing
    1 tbsp Hot Mustard
    5 slices PC Reduced Salt Fully Cooked Bacon, crumbled

Directions

1. Boil cauliflower in salted water until cooked (just this side of mushy).

2. Chop up green onions and red peppers while cauliflower is cooking.

3. Cook bacon in microwave as per package instructions. Crumble when cool.

4. When cauliflower is cooked, mash it.

5. Add the Miracle Whip and the hot mustard and mix.

6. Add the peppers, onions and crumbled bacon and mix well.

7. Enjoy!

Serving Size: Makes 6 1-cup servings.
